For the Avocado Salsa

  • 2 medium ripe but firm avocados Ensuring a creamy texture in the salsa.

Preparation

  • In a small bowl, whisk together the chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper.
  • Apply the spice rub evenly on the chicken breasts.
  • Allow the chicken to marinate for at least 30 minutes at room temperature, or refrigerate for up to 8 hours.

Cooking the Chicken

  • For stovetop cooking, heat a grill pan or skillet over medium-high heat. Lightly grease the surface before placing the chicken.
  • Cook for 3-5 minutes on one side until beautifully browned; then flip and cover, reducing the heat to medium.
  • Cook an additional 5-7 minutes until fully cooked. Let the chicken rest for 5 minutes after cooking.
  • For grilling, preheat your grill to medium heat, approximately 375-450°F. Grill the chicken for about 5-7 minutes per side.
  • Pause to let the chicken rest after cooking.

Preparing the Avocado Salsa

  • In a bowl, combine all ingredients except for the avocados.
  • Cover and chill the salsa to allow the flavors to meld.
  • Just before serving, gently fold in the chopped avocados to avoid browning.

Notes

For maximum flavor, marinate your chicken overnight. Experiment with fresh herbs in the salsa for a unique twist.
