Instructions
 

Preparation of Macaron Shells

  • Sift together almond flour, powdered sugar, ground ginger, cinnamon, and nutmeg into a bowl.
  • In a separate bowl, whip the egg whites until foamy. Gradually add in granulated sugar and continue to whip until stiff peaks form.
  • Gently fold the dry ingredients into the meringue, mixing until just combined.
  • Transfer the batter into a piping bag fitted with a round tip. Pipe rounds onto a lined baking sheet.
  • Allow the macarons to rest for 30-45 minutes until they are dry to the touch.

Baking the Macarons

  • Preheat your oven to 300°F (150°C). Bake the macarons for 14-16 minutes until slightly risen.
  • Remove from the oven and let cool completely before removing from the baking sheet.

Preparing the Filling
