Preparation

  • Separate the egg yolks from the whites into two bowls.

  • In another bowl, beat egg whites with cream of tartar until stiff peaks form.
  • Gently fold the whipped egg whites into the yolk mixture with a spatula until just combined, preserving volume.

Cooking
