Instructions

Preparation

  • In a separate bowl, whisk the egg yolks, milk, vanilla extract, and melted butter until smooth and creamy.
  • Gradually add the sifted dry ingredients to the wet mixture, stirring gently until just combined.
  • Whisk the egg whites and cream of tartar in another bowl until stiff peaks form.
  • Gently fold the whipped egg whites into the batter in three parts to maintain airiness.

Cooking

  • Preheat a non-stick skillet on low heat and lightly grease it.
  • Spoon the batter onto the skillet to form round shapes.
  • Cover the skillet with a lid and let the pancakes cook on low for 3-4 minutes.
  • Flip the pancakes gently and cook for an additional 2-3 minutes until they are golden brown.
  • Remove from the skillet and serve immediately, dusting with powdered sugar or adding your favorite toppings.

Notes

Avoid rushing the whisking process as it can lead to deflated egg whites. For healthier options, substitute all-purpose flour with almond flour or whole wheat flour. You can also experiment with adding matcha powder or cacao powder for variation.
