Frosting Ingredients

  • 1/2 cup unsalted butter, softened until creamy

  • 2 tablespoons milk to achieve the right consistency
  • 1 teaspoon vanilla extract to enhance flavor
  • 1/2 teaspoon peppermint extract to elevate the peppermint taste
  • to taste additional crushed peppermint candies for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the softened butter with the granulated and brown sugars until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt, then gradually add to the wet mixture, stirring until just combined.
  • Fold in the chocolate chunks and crushed peppermint candies.
  • Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake for 10-12 minutes, until the edges are golden and the centers remain soft.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Frosting

  • Beat the softened butter until creamy, then gradually add the powdered sugar, milk, vanilla, and peppermint extracts until smooth.
  • Once cookies are fully cooled, frost each and garnish with additional crushed peppermint candies.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze un-frosted cookies for longer freshness.
