Instructions
 

Cooking the Tortellini

  • Cook the tortellini according to the package instructions. Drain and set aside, ensuring to reserve about 1/4 cup of the pasta water for later use.

Cooking the Beef and Spinach

  • While the tortellini is cooking, heat the olive oil in a large skillet over medium heat.
  • Add the ground beef to the skillet, season generously with salt and pepper, and cook until browned. Break the meat into small pieces as it cooks for even browning.
  • Once the beef is cooked, add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Stir in the tablespoon of butter and chopped spinach, cooking until the spinach wilts, about 2-3 minutes.

Making the Garlic Butter Sauce

  • Melt the remaining butter in a separate pan over medium heat.
  • Add the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese and cook for 2-3 minutes until the sauce thickens. Season with salt and pepper.

Combining Ingredients

  • Add the cooked tortellini to the beef and spinach mixture in the skillet. Toss gently to combine.
  • Pour the garlic butter sauce over the pasta and toss to ensure each tortellini is coated. If the sauce seems too thick, add a bit of the reserved pasta water.

To elevate your dish, use freshly grated Parmesan cheese and consider adding other vegetables such as cherry tomatoes or bell peppers. You can substitute the ground beef with ground turkey or chicken for a leaner option.
