Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and prepare a 9-inch springform pan.
  • Combine the chocolate cookie crumbs with melted butter and press firmly into the bottom of the springform pan.
  • Bake the crust for 10 minutes, then allow to cool.

Cheesecake Filling

  • In a mixing bowl, beat cream cheese and granulated sugar until smooth.
  • Add vanilla extract and melted chocolate chips, mixing until fully combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Pour the mixture into the cooled crust and bake for 50-55 minutes.
  • Let cool inside the oven with the door ajar for 1 hour.
  • Chill in the refrigerator for at least 4 hours, preferably overnight.

Topping

  • In a saucepan, combine chopped pecans, shredded coconut, sweetened condensed milk, and heavy cream. Cook over medium heat, stirring until thickened (5-7 minutes).
  • Remove from heat and stir in melted chocolate chips. Let cool before spreading over the cheesecake.

Serving

  • Top the cheesecake with the coconut-pecan mixture and serve.

Notes

Ensure cream cheese is softened for a smooth texture; use high-quality chocolate for best flavor. Can be prepared a day in advance.
