Ingredients
  

For the Cod

  • 4 fillets cod fillets (about 6 oz each)
  • 2 tbsp olive oil For cooking the cod
  • Salt and pepper to taste To season the cod

For the Ginger Soy Glaze

  • 1/4 cup low sodium soy sauce
  • 2 tbsp honey Can substitute with maple syrup for vegan alternative
  • 1 tbsp fresh ginger, grated
  • 1 tbsp garlic, minced
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds (for garnish)
  • 2 tbsp green onions, chopped (for garnish)

Instructions
 

Preparation of Ginger Soy Glaze

  • In a small saucepan, combine the soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil.
  • Stir well, and then bring the mixture to a gentle simmer over medium heat.
  • Allow it to simmer for about 5-7 minutes, stirring occasionally until the sauce thickens slightly.

Cooking the Cod

  • Heat the olive oil in a large skillet over medium-high heat.
  • Rinse and pat dry the cod fillets. Season both sides with salt and pepper.
  • Carefully place the seasoned cod fillets into the skillet and cook for 3-4 minutes on each side.
  • Ensure the fish is cooked through and reaches an internal temperature of 145°F (63°C).

Finishing Touches

  • Reduce the heat to low and pour the ginger soy glaze over the fillets, allowing it to envelop the fish.
  • Cook for an additional 1-2 minutes.
  • Garnish with sesame seeds and chopped green onions before serving.

Notes

For a sticky finish, let the glaze cool slightly before drizzling it over the cooked cod. For a lighter version, opt for grilled or baked cod instead of pan-frying.
