Preparation

  • In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt.
  • In a large bowl, cream the softened butter and brown sugar until light and fluffy.
  • Add the egg, molasses, and vanilla extract, mixing until fully combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  • If too sticky, add a bit more flour.
  • Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least one hour.

Baking

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • On a floured surface, roll out one portion of your dough to about 1/4-inch thickness.
  • Use cookie cutters to cut out your desired shapes.
  • Place cutouts on lined baking sheets, leaving space between them.
  • Bake in the oven for 8-10 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack.

Royal Icing Preparation

  • Beat the egg whites (or meringue mixture) until stiff peaks form.
  • Gradually add in powdered sugar and vanilla extract, mixing until smooth.
  • Divide icing into bowls and color with food coloring for your winter forest design.

Decorating

  • Pipe the royal icing onto cookies, creating whimsical winter forest designs.
  • For finishing touches, apply edible gold dust and sprinkle fine sugar to mimic a snow effect.
  • Allow royal icing to dry completely before serving or packaging.

Notes

To elevate flavor, consider adding freshly grated nutmeg or a hint of orange zest. Measure flour accurately; too much can make dough dry. Increase ground ginger or cinnamon for a spicier cookie.
