Main Ingredients

  • 1 pound Thin-sliced chicken breast Tender and juicy, ideal for marinating and cooking.
  • 1/4 cup Feta cheese, crumbled Creamy and salty, a quintessential Greek ingredient.
  • 1/4 cup Fresh chopped parsley Bright and fresh, adding a pop of color.

Instructions
 

Make the Marinade

  • Combine the lemon zest, lemon juice, olive oil, minced garlic (or garlic powder), oregano, smoked paprika, sea salt, and black pepper in a large mixing bowl. Whisk until well combined and emulsified.
  • Reserve 1/4 cup of the marinade for later. Add the chicken to the bowl with the remaining marinade and ensure each piece is nicely coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Cook the Chicken

  • Heat a nonstick skillet over medium-high heat and add a drizzle of olive oil. Place the marinated chicken in the skillet, searing until the bottoms are golden brown, about 3-4 minutes.
  • Flip the chicken and continue cooking for an additional 3-4 minutes or until the chicken is white throughout and juices run clear.

Finish and Serve

  • Transfer the chicken to a serving plate. Drizzle with the reserved marinade, sprinkle with parsley and feta cheese, and serve with lemon wedges.

Notes

For optimal flavor, use fresh lemon juice. Marinate for longer than 30 minutes if possible. Works well with shrimp or fish. Consider adding olives or sun-dried tomatoes for extra flavor.
