Instructions
 

Preparation

  • Shape the mixture into golf ball-sized meatballs and place them on a plate. Chill in the refrigerator for 15-20 minutes to help them hold their shape during cooking.

Cooking

  • In a pot, combine the chicken broth and olive oil. Bring to a gentle simmer on medium heat.
  • Carefully add the chilled meatballs to the simmering broth. Cover and cook over low heat for approximately 30 minutes.
  • In a separate bowl, whisk together the 2 eggs and lemon juice, tempering with a few spoonfuls of the hot broth to avoid curdling.
