  • 2–3 lbs 2–3 lbs (900g–1.4kg) fresh or frozen octopus, cleaned Tender, meaty, and bursting with flavor.
  • 1 units 1 lemon, halved For added zest.
  • ½ cup ½ cup extra virgin olive oil (divided) Rich in antioxidants and healthy fats.
  • 4 cloves 4 cloves garlic, smashed Bursts with bold flavor.
  • 2 leaves 2 bay leaves Adds delicate herbal notes.
  • 1 small onion 1 small onion, halved Sweet and caramelized.
  • 1 tsp 1 tsp sea salt Essential for seasoning.
  • ½ tsp ½ tsp black peppercorns Adds a hint of spice.
  • 2 tsp 2 tsp smoked paprika Adds warmth and a hint of mystery.
  • 1 tsp 1 tsp dried oregano (or fresh chopped) A hallmark of Mediterranean cuisine.

Instructions
 

Preparation

  • If using fresh octopus, freeze it for at least 24 hours to help tenderize the meat. After freezing, allow it to thaw completely.
  • Bring a large pot of water to a boil with lemon halves, garlic, bay leaves, onion, salt, and peppercorns.

Cooking

  • Reduce the heat to a simmer and add the octopus. Let it cook gently for 40-45 minutes until tender when pierced with a knife.
  • Remove the octopus from the pot and let it cool slightly. Pat dry with paper towels.
  • Cut tentacles apart for easy grilling. In a bowl, mix ¼ cup olive oil, smoked paprika, oregano, and a squeeze of lemon juice. Coat the pieces of octopus evenly and let them marinate for 15-30 minutes.

Grilling

  • Preheat your grill or grill pan to high heat. Brush it lightly with olive oil.
  • Grill the marinated octopus for 2-3 minutes per side until lightly charred.

Serving

  • Drizzle with remaining olive oil, sprinkle with fresh parsley, and serve with zesty lemon wedges.

Notes

Avoid overcooking to prevent rubbery texture. Ensure octopus is dry before grilling for better char. Enjoy with crusty bread or vibrant salads.
