  • 1 can (15 oz) diced tomatoes bursting with flavor
  • 1 can (15 oz) corn drained and sweet
  • 1 can (15 oz) pinto beans drained and rinsed for freshness
  • 1 can (15 oz) diced potatoes providing heartiness
  • 1 small onion diced for that aromatic base
  • 2 cups beef broth rich and savory
  • 1 tsp chili powder adding a comforting warmth
  • 1 tsp garlic powder for depth and flavor
  • 1/2 tsp smoked paprika inducing a smoky essence

Cooking Instructions

  • Start by browning the ground beef in a skillet over medium heat until it’s fully cooked. Drain any excess fat.
  • In a large crock pot, combine the browned beef, diced tomatoes, drained corn, drained and rinsed pinto beans, diced potatoes, and onion.
  • Pour in the beef broth, stirring gently to incorporate all the ingredients.
  • Sprinkle the chili powder, garlic powder, smoked paprika, salt, and pepper over the mixture. Stir to blend all flavors.
  • Cover the crock pot and cook on low for 6–8 hours or on high for 3–4 hours.
  • When ready, stir the soup before serving and enjoy it warm.

Notes

For extra flavor, sauté the onion and garlic before adding. Add jalapeños for spice or use turkey for a healthier version. Top with sour cream or shredded cheese.
