  • 1/4 cup green onion, chopped giving a fresh and vibrant note
  • 2 cloves garlic, finely chopped infusing the bisque with aromatic warmth
  • 1/3 cup plus 2 tablespoons flour for thickening this creamy delight
  • 1 cup heavy whipping cream yielding a luxurious texture
  • 5-6 cups homemade shrimp stock the heart of this bisque with its deep flavor
  • 2 lb raw jumbo shrimp, peeled, deveined, and chopped ensuring a hearty seafood experience

For garnish

  • 4 slices rustic or French bread, cubed and toasted for rustic crunch
  • Salt & pepper to taste enhancing all the flavors

Preparation

  • Begin by melting the butter in a large pot over medium heat.
  • Add the chopped celery, carrot, and green onion. Sauté for about 5 minutes until they soften.
  • Toss in the finely chopped garlic and stir for another minute.
  • Sprinkle in the flour, stirring for an additional minute.
  • Gradually pour in the heavy whipping cream while stirring continuously.
  • Slowly add the shrimp stock and cook for about 10 minutes until thickened.
  • Add the chopped shrimp and bring to a gentle boil, then lower the heat and simmer for 10 minutes.
  • Season your bisque with salt and pepper to taste.
  • Serve hot, garnished with toasted croutons and additional chopped green onion.

Notes

For the ultimate experience, use fresh shrimp and consider adding a splash of lemon juice or a pinch of cayenne pepper for a kick. Feel free to reserve some shrimp for presentation. Don’t rush the sautéing process.
