Instructions
 

Make the White Chocolate Mousse

  • Place your chopped white chocolate in a heatproof bowl.
  • Melt the chocolate using a double boiler or microwave in 30-second intervals, stirring in between until melted. Set aside to cool slightly.
  • In a separate mixing bowl, pour the heavy cream and beat with an electric mixer until stiff peaks form, about 3-5 minutes.
  • When your chocolate is cool but still pourable, gently fold it into the whipped cream along with the vanilla extract.

Prepare the Raspberry Layer

  • In a small saucepan over low heat, combine your fresh raspberries, sugar, and lemon juice.
  • Cook gently, stirring occasionally, until the raspberries have softened and started to release their juices, about 5-7 minutes.
  • Remove from heat and allow the raspberry mixture to cool.

Assemble the Parfait

  • In individual serving glasses or bowls, start by adding a layer of crushed graham crackers or biscuits, if using.
  • Spoon in some of the raspberry mixture followed by a generous layer of the white chocolate mousse.
  • Repeat these layers until your glasses are filled, finishing with a mousse layer on top.
  • Chill the parfaits in the refrigerator for at least 2 hours before serving.

Serve

  • Garnish with a few fresh raspberries perched on top just before serving.

Notes

Allow your white chocolate to cool slightly before folding into the whipped cream to maintain the mousse’s light texture. Use fresh raspberries for optimal flavor, and don't shy away from making this a day ahead; chilling overnight allows the flavors to meld beautifully.
