Making the White Chocolate Mousse

  • Melt the white chocolate chips in a microwave-safe bowl, heating in 20-second intervals until smooth.
  • Whip the heavy cream until stiff peaks form, ensuring it is fluffy.
  • In a separate bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  • Fold the melted white chocolate into the mascarpone mixture gently.
  • Carefully fold the whipped cream into the chocolate mixture to maintain its airy texture.

Assembling the Parfaits

  • Sprinkle a layer of graham cracker crumbs at the bottom of each serving glass if using.
  • Spoon in the white chocolate mousse, followed by layers of fresh raspberries until the glass is filled.
  • Finish with a layer of mousse on top and garnish with fresh raspberries and mint leaves.
  • Refrigerate the parfaits for at least 2 hours before serving.

Notes

For best flavor, use high-quality white chocolate chips. You may add a pinch of salt or substitute berries as desired.
