For the frosting

  • 1 cup heavy cream for a luxurious frosting base

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them or lining them with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together the softened butter and granulated sugar with a mixer until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, followed by stirring in the vanilla extract.
  • Blend in the crushed pineapple and milk, mixing until well combined.
  • Gradually add the dry ingredients to the mixture, mixing until just combined. Stir in the melted white chocolate chips.
  • Divide the batter evenly between the prepared cake pans and smooth tops.

Baking

  • Bake in the preheated oven for 25-30 minutes, until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • In a medium bowl, beat together the cream cheese and powdered sugar until smooth.
  • Add the heavy cream and vanilla extract, beating until the frosting thickens.
  • Stir in the remaining melted white chocolate chips.

Assembly

  • Once the cakes have cooled completely, spread a layer of frosting on top of one cake layer before placing the second layer on top.
  • Coat the entire cake in the remaining frosting.
  • Decorate with white chocolate shavings or pineapple slices as desired.
