For the Lamb

  • 8 medium-sized Lamb Chops Choose well-marbled for tenderness and flavor.
  • Fresh Parsley For garnish A pop of color and freshness when serving.

Instructions
 

Preparation

  • Process or blend red bell pepper, fresh parsley, and garlic into a coarse mixture for the marinade base.
  • Carefully divide the lamb rack into 8 chops, using a sharp knife.
  • In a large bowl, combine lamb chops with bell pepper mixture, salt, black pepper, oregano, onion powder, thyme, smoked paprika, olive oil, and lemon juice.
  • Use your hands to coat each chop evenly in the marinade.
  • Cover the bowl and let marinate in the refrigerator for 1 hour.

Cooking

  • Preheat oven to 400°F (200°C).
  • In a hot cast iron skillet, heat about 2 tablespoons of olive oil over medium heat until very hot.
  • Sear each lamb chop for 1-2 minutes on each side until a crust forms.
  • Transfer seared chops to the skillet without overlapping and bake in the oven for 2-10 minutes, depending on desired doneness.
  • If necessary, repeat searing for any remaining chops.
  • Plate the lamb chops garnished with fresh parsley and serve.

Notes

Let the cooked chops rest for a few minutes after removing from the oven to retain juices. Feel free to experiment with fresh herbs and grilling options for a smoky flavor.
