Preparation

  • Place the pistachios in a food processor or blender. Pulse until finely chopped, almost to a paste-like consistency.
  • In a medium mixing bowl, combine Greek yogurt, almond milk, chopped pistachios, honey or maple syrup, vanilla extract, and salt. Stir until smooth.
  • Cover and refrigerate the mixture for 1-2 hours to allow flavors to meld and texture to stabilize.

Churning

  • If using an ice cream maker, pour the chilled mixture into the machine and churn according to the manufacturer's instructions (about 20-25 minutes).
  • Transfer the ice cream to a storage container and freeze for at least 3 hours to firm up.

Serving

  • Scoop the ice cream into bowls and enjoy. Optionally top with crushed pistachios or a drizzle of honey.

Notes

For best results, use high-quality fresh ingredients. Allowing the mixture to chill thoroughly will enhance texture and flavor. Use an ice cream maker for a creamier result, or try a freeze-and-stir method if you don’t have one.
