Ice Cream Base

  • 2 cups heavy cream Rich and velvety, it forms the lush base of your ice cream.
  • 1 cup whole milk Contributes to the creamy consistency while balancing sweetness.
  • 3/4 cup granulated sugar Sweetens the mix and enhances the vanilla flavor.
  • 1 bean vanilla bean Infuses the ice cream with a deeply aromatic essence; can substitute with 2 teaspoons pure vanilla extract.
  • 4 large egg yolks Provides a rich and smooth texture characteristic of gourmet ice creams.
  • 1 pinch salt Enhances the overall flavor, bringing all elements together.

Instructions
 

Preparation

  • In a medium saucepan, combine heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until hot but not boiling.
  • Split the vanilla bean in half lengthwise and scrape out the seeds. Add both the seeds and the pod to the saucepan. If using vanilla extract, add it after removing the saucepan from heat.
  • In a separate bowl, whisk together egg yolks and a pinch of salt until they turn pale and slightly thickened.
  • Gradually pour a small amount of the hot milk mixture into the egg yolks, whisking constantly to temper them.
  • Pour the tempered egg mixture back into the saucepan with the remaining cream and milk mixture. Cook over low heat, stirring constantly until thickened and coats the back of a spoon.
  • Strain the custard through a fine-mesh sieve into a clean bowl to remove the vanilla pod and any cooked egg bits.
  • Allow the custard to cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.

Churning

  • Churn the chilled custard in an ice cream maker according to the manufacturer's instructions.
  • Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.

Notes

To elevate your ice cream, infuse the heavy cream with additional vanilla or add mix-ins like chocolate chips or fresh fruit while churning. For serving, top with chocolate or caramel sauce, garnish with fresh mint or sprinkles.
