Coating Ingredients

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine the buttermilk, garlic powder, smoked paprika, salt, and black pepper. Stir well until all ingredients are thoroughly mixed.
  • Add the chicken cutlets to the mixture, ensuring they are fully submerged. Cover with plastic wrap and marinate for at least 30 minutes.

Prepare to Dredge

  • Set up a dredging station: Place flour in one bowl, whisk the egg in a second bowl, and pour panko breadcrumbs into a third bowl.

Dredge the Chicken

  • Once the chicken has marinated, take each cutlet out and dip it into the flour, shaking off the excess.
  • Next, dip it into the egg, followed by the panko breadcrumbs, making sure to coat it well for maximum crunch.

Fry the Cutlets

  • Heat a generous amount of vegetable oil in a skillet over medium-high heat. Once the oil is shimmering, carefully place the coated chicken cutlets in the skillet.
  • Fry the cutlets for 3–4 minutes on each side until they are golden brown and cooked through.
  • Use a meat thermometer to ensure the internal temperature reaches 165°F.

Prepare Hot Honey

  • In a small saucepan, combine honey, hot sauce, and red pepper flakes. Warm over low heat, stirring until fully combined and smooth.

Serve

  • Drizzle or brush the hot honey mixture over the fried chicken cutlets while they are still warm.
  • Serve immediately for the best flavor and texture.

Notes

For the crispiest cutlets, ensure the oil is hot enough before adding the chicken. Experiment with different types of hot sauce to find your perfect heat level. Marinate overnight for deeper flavor.
