Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 8-inch round cake pans.
  • In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, cream the softened butter and eggs until light and airy.
  • Add sour cream, key lime juice, key lime zest, and vanilla extract to the butter and egg mix; stir carefully.
  • Gradually incorporate the dry ingredients into the wet mixture until smooth.
  • Divide the batter evenly between prepared pans and smooth the tops.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.

Frosting

  • Beat softened cream cheese and butter until smooth and creamy.
  • Gradually add powdered sugar, key lime juice, and zest, mixing until fluffy.
  • Once the cakes are completely cooled, frost the top of one layer, place the second layer on top, and frost the top and sides generously.

Notes

Ensure all ingredients are at room temperature and use fresh key limes for optimal flavor. Be careful not to overmix the batter to keep the cake light. Store leftovers in an airtight container in the refrigerator for up to four days or freeze for up to two months.
