Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine graham cracker crumbs, 1/3 cup of sugar, and melted butter. Mix until well combined.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.

Filling

  • In a large bowl, beat the softened cream cheese with 1 cup of sugar, flour, key lime juice, lime zest, and vanilla extract until smooth and creamy.
  • Add the eggs one at a time, beating just until blended.
  • Stir in the sour cream and blend until smooth and well incorporated.
  • Pour the cheesecake filling over the prepared crust in the pan, distributing evenly.

Baking

  • Bake for about 55-60 minutes, until the center is set but slightly wobbly.
  • Once done, turn off the oven and leave the door slightly open for 1 hour.
  • After an hour, remove the cheesecake from the oven and let it cool completely on a wire rack.

Chilling

  • Chill in the refrigerator for at least 4 hours before serving.
