For the base

  • 2 cups full-fat milk Creamy, luscious, and perfect for a rich base
  • 1 cup heavy cream Thick and velvety, elevating the texture
  • ½ cup sweetened condensed milk Contributes caramel sweetness and creaminess
  • ¼ cup sugar For a touch of added sweetness

For flavoring

  • ½ teaspoon ground cardamom Earthy, aromatic spice that adds depth
  • a pinch saffron strands Optional, luxurious, and fragrant
  • ¼ cup chopped pistachios Optional, offering a delightful crunch
  • 1 tablespoon rose water or kewra essence Optional, adding floral notes

Preparation

  • Start by pouring the full-fat milk into a heavy-bottomed pan and bring it to a gentle boil.
  • Reduce heat to low and let the milk simmer for about 15-20 minutes to reduce volume and concentrate flavors, stirring occasionally to avoid scorching.
  • Once thickened, add the heavy cream, sweetened condensed milk, and sugar. Stir well and let simmer for another 10-15 minutes.
  • Introduce ground cardamom and if using, saffron at this stage.
  • Fold in the chopped pistachios and rose water or kewra essence.
  • Allow the mixture to cool to room temperature before pouring into kulfi or popsicle molds.
  • Place filled molds into the freezer to set for 6-8 hours or overnight.
  • When ready to serve, run warm water over the outside of the molds to release the kulfi easily.

Notes

Ensure all ingredients are chilled for added creaminess and be patient allowing to freeze overnight for best results.
