For the blueberry topping

Instructions
 

Preparation of the crust

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
  • Press the mixture into the bottom of a 9x9-inch pan to form a crust.
  • Bake for 8-10 minutes until golden brown and cool completely on a wire rack.

Preparation of the cheesecake filling

  • In a large bowl, beat softened cream cheese and powdered sugar until smooth.
  • Mix in vanilla extract, lemon zest, and lemon juice until combined and fluffy.
  • In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  • Spread the cheesecake filling evenly over the cooled crust and chill in the refrigerator.

Preparation of the blueberry topping

  • In a saucepan, combine fresh blueberries, sugar, and lemon juice over medium heat.
  • Stir occasionally until the sugar dissolves and berries release their juices.
  • If desired, mix cornstarch with water then add to the blueberry mixture and cook until thickened.
  • Cool the blueberry topping to room temperature.

Final assembly

  • Spoon the blueberry topping over the cheesecake layer and refrigerate for at least 4 hours, ideally overnight.

Notes
