  • 1/2 cup fresh chopped parsley, divided Adds freshness and color.
  • 2 tablespoons capers Compliments the lemon.

Instructions
 

Preparation

  • Season the sole fillets with salt and pepper on both sides.
  • Dredge each fillet in flour, pressing lightly to coat both sides.

Cooking

  • In a large skillet, heat 4 tablespoons of butter over medium-high heat until foamy.
  • Add coated fillets and cook undisturbed for 2 minutes until a crust forms.
  • Carefully flip the fillets and cook for an additional 2 minutes.
  • Transfer cooked fillets to a serving plate and cover with foil to keep warm.

Sauce Preparation

  • Add the remaining 4 tablespoons of butter to the skillet with lemon juice and half of the parsley.
  • Whisk until fully melted and combined.

Serving

  • Drape the sauce over the fillets, sprinkle with capers, add remaining parsley, and garnish with lemon slices.

Notes

For added richness, consider sautéing minced garlic in the butter. Use a fresh zester for elegant lemon curls as garnish. Always taste the sauce to adjust seasoning.
