Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • Grease and line the springform pan with parchment paper.
  • In a bowl, combine graham cracker crumbs, chopped pistachios, sugar, and melted butter. Mix until it feels like damp sand.
  • Press the mixture into the bottom of the springform pan and bake for 10 minutes. Let it cool.

Filling

  • In a large mixing bowl, beat softened cream cheese and sour cream until smooth.
  • Add sugar, eggs, vanilla extract, lemon zest, lime zest, lemon juice, and lime juice. Beat until fully combined.
  • Gently fold in the chopped pistachios.
  • Pour the batter over the cooled crust and spread evenly.
  • Bake for 50-60 minutes, until the center is set. Cool completely in the pan.
  • Refrigerate for at least 4 hours or overnight.

Topping

  • In a saucepan, combine cherries, sugar, and lemon juice. Simmer over medium heat for 10-15 minutes until syrupy.
  • Let the cherry mixture cool, then spoon it over the chilled cheesecake before serving.

Notes

Use room-temperature cream cheese for best results. Refrigerating overnight enhances flavor and texture.
