Preparation

  • Preheat your oven to 325°F (163°C) to prepare for baking the cheesecake.
  • Grease a 9-inch springform pan well and line the bottom with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until fully combined.
  • Press the crumb mixture firmly into the bottom of the pan to form an even layer. Bake the crust for 10 minutes, then remove from the oven and allow it to cool.

Filling

  • While the crust cools, beat the softened cream cheese and 1 cup sugar together in a large bowl until the mixture is smooth and creamy, about 3 minutes.
  • Add the vanilla extract, fresh lemon juice, lime juice, lemon zest, and lime zest to the cream cheese mixture. Beat until well combined.
  • Add the eggs, one at a time, beating well after each addition to ensure smooth integration.
  • Gently fold in the chopped pistachios and cherries, distributing them evenly throughout the batter.
  • Pour the cheesecake batter into the cooled crust, smoothing the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes until edges are set but the center is still slightly jiggly.
  • Turn off the oven, leaving the cheesecake inside for 1 hour.
  • Remove the cheesecake from the oven and let it cool to room temperature.
  • Refrigerate for at least 4 hours, preferably overnight, allowing the cheesecake to fully set.
  • Once chilled, top with whipped cream and garnish with whole cherries and additional chopped pistachios before serving.

Notes

For best flavor, use fresh, organic lemons and limes. Allow the cream cheese to soften completely for a smooth batter. Adjust sugar according to preference. Do not skip the chilling step for creamy texture. Additional fruit or edible flowers can be added as a garnish.
