Instructions
 

Prepare the crust

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine graham cracker crumbs, finely chopped pistachios, melted butter, and sugar. Stir until well mixed.
  • Press the mixture into the bottom of a springform pan to form a crust.
  • Bake for 10-12 minutes or until golden and set. Allow to cool completely.

Make the cheesecake filling

  • In a large mixing bowl, beat softened cream cheese until smooth.
  • Add granulated sugar, lemon zest, lime zest, lemon juice, lime juice, and vanilla extract. Beat until fully incorporated.
  • Add eggs one at a time, beating well after each addition.

Bake the cheesecake

  • Bake at 325°F (163°C) for 50-60 minutes until the center is set but slightly jiggly.
