  • 1.5 cups graham cracker crumbs for the crispy foundation

  • 1 each lemon zest for zestiness
  • 1 each lime zest for zestiness
  • 1 tablespoon lemon juice for acidity
  • 1 tablespoon lime juice for acidity
  • 1/2 teaspoon vanilla extract to enhance flavor
  • 1 cup heavy whipping cream for a light and airy texture

Cherry Topping

  • 1 cup fresh cherries, pitted and halved for topping
  • 2 tablespoons sugar to create cherry syrup

Garnish

  • 1/4 cup chopped pistachios for crunch on top

Preparation

  • Preheat the oven to 325°F (165°C).
  • In a small bowl, combine graham cracker crumbs and melted butter, mixing well.
  • Press the mixture firmly into the bottom of a non-stick springform pan.
  • Bake in the preheated oven for 10 minutes, then remove and let cool completely.

Cheesecake Filling

  • In a large mixing bowl, combine cream cheese, mascarpone cheese, powdered sugar, sour cream, lemon zest, lime zest, lemon juice, lime juice, and vanilla extract.
  • Beat with an electric mixer until smooth and creamy.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Fold the whipped cream into the cream cheese mixture gently.
  • Pour the filling onto the cooled crust and smooth the top.
  • Refrigerate the cheesecake for at least 4 hours or overnight.

Cherry Topping

  • In a small saucepan, combine fresh cherries and sugar.
  • Cook over low heat for 5-7 minutes until cherries soften and release juices.
  • Let the cherry syrup cool before using.

Finishing Touch

  • Once cheesecake is set, pour cherry syrup over the top.
  • Sprinkle with chopped pistachios and serve.

Notes

Make ahead for flavors to develop. Experiment with other fruits for toppings. A dollop of whipped cream enhances the dessert experience.
