Ingredients
  

For the Crust

  • 1.5 cups crushed pistachios bringing a lovely nutty flavor
  • 0.25 cups granulated sugar to add sweetness
  • 0.25 cups unsalted butter, melted providing richness

For the Cheesecake Filling

  • 24 oz cream cheese, softened for a creamy texture (3 packages of 8 oz each)
  • 1 cup granulated sugar ensuring balance in sweetness
  • 0.25 cups sour cream adding tanginess
  • 3 large eggs for stability
  • 2 tbsp lemon juice to brighten the flavor
  • 1 tbsp lime juice adding a zesty kick
  • 1 tsp vanilla extract for an aromatic touch
  • 0.5 cups heavy cream enhancing the cheesecake's creamy consistency

For the Topping

  • 1 cup fresh cherries, pitted and halved for topping
  • 1 tbsp lemon juice for the topping as well
  • 1 tbsp lime juice to enhance the cherry flavor
  • 2 tbsp honey adding natural sweetness
  • 0.25 cups chopped pistachios for garnish

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a food processor, pulse the crushed pistachios, sugar, and melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan to form a crust.
  • Bake the crust in the preheated oven for 10 minutes, then remove and cool completely.
  • In a large bowl, beat the softened cream cheese and sugar together until smooth.
  • Add sour cream, lemon juice, lime juice, and vanilla extract, mixing until well combined.
  • Incorporate the eggs one at a time, beating well after each addition.

Baking

  • Pour the cheesecake batter into the cooled pistachio crust and smooth the top.
  • Bake for 50-60 minutes, until the edges are set while the center has a slight jiggle.
  • Turn off the oven, allow the cheesecake to cool inside for 1 hour with the door slightly ajar, then refrigerate for at least 4 hours or overnight.

Topping

  • In a small saucepan, combine the cherries, lemon juice, lime juice, and honey. Cook over medium heat for 5-7 minutes until the mixture thickens slightly.
  • Let the cherry mixture cool to room temperature.
  • Once the cheesecake is chilled, pour the cherry topping over it and sprinkle with chopped pistachios.
  • Slice and serve chilled.

Notes

Use room temperature cream cheese for a smoother filling. Add more lemon or lime juice for a stronger flavor gradually. A pinch of salt in the cherry topping can enhance flavors. Prepare the crust in advance and chill the cheesecake overnight for the best results.
