Ingredients
  

For the crust

  • 1.5 cups 1 1/2 cups of graham cracker crumbs
  • 0.25 cups 1/4 cup of granulated sugar
  • 0.5 cups 1/2 cup of melted unsalted butter Adds rich, buttery texture
  • 0.25 cups 1/4 cup of chopped pistachios Enhances crunch

For the filling

  • 16 oz 16 oz of softened cream cheese Ensure it's softened for easy mixing
  • 1 cup 1 cup of sour cream Provides a luxurious, silky mouthfeel
  • 0.75 cups 3/4 cup of granulated sugar
  • 3 large 3 large eggs
  • 1 tbsp 1 tablespoon of fresh lemon juice
  • 1 tbsp 1 tablespoon of fresh lime juice
  • 1 each Zest of one lemon For zestiness
  • 1 each Zest of one lime For zestiness
  • 1 tsp 1 teaspoon of vanilla extract
  • 0.5 cups 1/2 cup of cherry puree Add to enrich flavor

For the topping

  • 1 cup 1 cup of fresh cherries, pitted and halved For garnish
  • 0.25 cups 1/4 cup of cherry preserves To enhance the cherry flavor
  • 0.25 cups 1/4 cup of chopped pistachios For additional crunch

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • Grease a 9-inch springform pan.
  • In a small bowl, combine graham cracker crumbs, granulated sugar, melted butter, and chopped pistachios. Mix until sandy.
  • Press the mixture into the bottom of the pan to form the crust.
  • Bake the crust for 10-12 minutes until golden brown, then let it cool.

Filling

  • In a large bowl, beat softened cream cheese and sour cream until smooth.
  • Gradually add granulated sugar and mix well.
  • Add eggs one at a time, beating gently after each addition.
  • Stir in lemon juice, lime juice, zests, and vanilla extract.
  • Gently swirl in cherry puree, creating a marbled effect.
  • Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.

Baking

  • Bake the cheesecake for 45-50 minutes until edges are set and center has a gentle jiggle.
  • Turn off the oven, leave the door ajar, and let the cheesecake cool inside for an hour.
  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours (overnight is best).

Topping

  • In a small saucepan, combine halved fresh cherries and cherry preserves. Cook over low heat, stirring until thickened for about 5-7 minutes.
  • Let it cool before topping the chilled cheesecake.
  • Top the cheesecake with cherry mixture and sprinkle with chopped pistachios.

Notes

Use softened cream cheese to prevent lumps and ensure an even mixture. Don't rush the cooling and chilling stages to achieve the best texture.
