Instructions
 

Dough Preparation

  • In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of baking powder.
  • Gradually pour in 3/4 cup of warm water and 2 tablespoons of olive oil, stirring until a soft dough forms.
  • Knead the dough on a lightly floured surface for about 5–7 minutes until smooth and elastic.
  • Cover the dough with a clean cloth or plastic wrap and let it rest for 30 minutes.

Filling Preparation

  • In a mixing bowl, combine 1 cup of crumbled feta cheese, 1/4 cup of chopped fresh mint, and 1 tablespoon of lemon zest.
  • Mix thoroughly and set aside while the dough rests.

Assembling Flatbreads

  • Once the dough has rested, divide it into small balls, about the size of a golf ball.
  • On a floured surface, roll each ball into a thin circle, roughly 6 inches in diameter.
  • Place a generous spoonful of the feta-mint mixture in the center of each circle and fold the dough over to create a half-moon shape.
  • Pinch the edges firmly to seal the mixture inside.

Cooking the Flatbreads

  • Heat a skillet over medium-high heat and brush the surface lightly with olive oil.
  • Place the stuffed flatbreads in the skillet without overcrowding, cooking for 2–3 minutes on each side until golden brown.

Serving the Flatbreads

  • Remove cooked flatbreads from the skillet and place on a serving plate.
  • Garnish with fresh parsley and serve warm.

Notes

For added flavor, consider adding minced garlic or red pepper flakes to the feta filling. Substitute feta with goat cheese for a unique twist. Ensure the skillet is at the right temperature to prevent sticking.
