Mediterranean Salmon Bake

Ingredients
  

Main Ingredients

  • 2 lb salmon filet Preferably wild-caught for superior flavor and texture.
  • 1 Tbsp avocado oil
  • 1 tsp sea salt Adjust to taste.
  • 1 tsp garlic powder
  • 1/2 piece red onion, finely chopped
  • 1 8.5-oz jar sun-dried tomatoes, drained and chopped
  • 5 oz baby spinach
  • 6 oz feta cheese crumbles
  • 1/3 cup pesto sauce Optional, for enhanced flavor.

Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  • Place the salmon filet on the baking sheet. Drizzle with avocado oil and brush to coat evenly. Season with sea salt and sprinkle garlic powder on top.

Baking

  • Bake the salmon in the center of the oven for 10 minutes.
  • Meanwhile, heat a skillet over medium heat and add a little more avocado oil. Sauté the chopped red onion for 5-8 minutes until soft and translucent.
  • Add the sun-dried tomatoes and baby spinach to the skillet. Cover and cook until the spinach has wilted.
  • Mix in feta cheese crumbles, allowing the warmth to slightly melt the cheese.
  • Remove the salmon from the oven and top with the sautéed spinach mixture.
  • Return the salmon to the oven and bake for another 8-10 minutes until it reaches an internal temperature of 145 degrees Fahrenheit.
  • If using, drizzle with pesto before allowing to rest for a few minutes.

Notes

Select quality salmon for the best results. Customize with vegetables like zucchini or bell peppers. A squeeze of fresh lemon juice before serving enhances the flavors.
