  • 1 cup shredded cheese (cheddar or Mexican blend) rich and creamy
  • 1 can black beans drained and rinsed, earthy and hearty
  • 1 tablespoon taco seasoning fragrant and zesty
  • 1 tablespoon olive oil smooth and luscious
  • to taste salt and pepper to enhance the vibrant flavors

Preparation

  • Season the chicken breasts with taco seasoning, salt, and pepper.
  • In a skillet, heat olive oil over medium heat and add the seasoned chicken. Cook for about 6-7 minutes per side until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest.

Cooking

  • In the same skillet, add diced tomatoes, corn, bell peppers, and black beans. Cook for about 5-6 minutes until softened.
  • Reduce heat to low and sprinkle shredded cheese over the vegetable mixture. Stir until it melts into a creamy sauce.
  • Slice the chicken and return it to the skillet, stirring gently to combine everything.

Serving

  • Serve the Mexican Chicken with Cheese Sauce and enjoy with warm tortillas, rice, or salad.

Notes

For a healthier alternative, consider using grilled chicken or tofu. Make sure to season generously and let the chicken rest after cooking.
