  • 2 tbsp fresh lemon juice Brightens the cheesecake with a zesty kick.
  • 1 each zest of 1 lemon Adds a fragrant citrus flavor to the filling.

For the blackberry compote

  • 1 cup fresh blackberries Juicy and flavorful, perfect for the topping.
  • 2 tbsp sugar Balances the tartness of the blackberries.
  • 1 tbsp lemon juice Boosts the berry flavor and tartness.
  • 1 tsp cornstarch (optional, for thickening) For a thicker blackberry compote.

Instructions
 

Preparation of Crust and Filling

  • Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl. Stir until well incorporated.
  • Press the mixture evenly into the bottoms of a muffin tin, forming solid bases for your cheesecakes.
  • Chill the muffin tin in the refrigerator while preparing the cheesecake filling.
  • In a large mixing bowl, beat the softened cream cheese with powdered sugar until the mixture is smooth.
  • Add the heavy whipping cream, vanilla extract, fresh lemon juice, and lemon zest. Beat until light and fluffy.

Assembly and Setting

  • Spoon the cheesecake filling over the chilled graham cracker crusts in the muffin tin. Smooth the tops evenly with a spatula.
  • Return the mini cheesecakes to the refrigerator to set for at least 3 hours, preferably overnight.

Preparation of Blackberry Compote

  • In a small saucepan, combine fresh blackberries, sugar, and lemon juice over medium heat, stirring occasionally.
  • For a thicker compote, mix cornstarch with cold water and stir into the berry mixture. Cook until thickened.
  • Remove from heat and let cool.

Serving

  • After the cheesecakes have set, spoon the cooled blackberry compote over each mini cheesecake.
  • Garnish with extra fresh blackberries or lemon zest if desired.

Notes

Ensure melted butter is evenly distributed for the crust. For a firmer crust, consider baking the crust for a few minutes before adding the filling. You can swap blackberries for other berries like raspberries or strawberries.
