Ingredients

Filling

  • 1 cup granulated sugar Balances the flavors.

  • 1 cup sour cream Adds a creamy texture.
  • 2 teaspoons peppermint extract Gives an invigorating scent.

Ganache and Topping

  • 0.5 cups heavy cream Enhances the textures of our ganache.
  • 8 oz semisweet chocolate, chopped Creates an indulgent layer of ganache.
  • 0.5 cups chopped mint chocolate candies Adds extra flavor and texture.
  • 1 pinch salt Balances all flavors.

Instructions
 

Preparation

  • Preheat the oven to 325°F (165°C).
  • Lightly grease a 9-inch springform pan.
  • In a medium bowl, combine chocolate cookie crumbs and melted butter until it resembles wet sand.
  • Press the mixture into the bottom of the prepared pan and bake for 10 minutes. Set aside to cool.

Filling

  • In a large mixing bowl, beat cream cheese and sugar together until smooth and creamy.
  • Add eggs one at a time, beating well after each addition.
  • Gently stir in the sour cream and peppermint extract.
  • Pour the cream cheese mixture into the cooled crust.

Baking and Cooling

  • Bake for 50-60 minutes, until edges are set but center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool completely in the oven with the door slightly ajar for an hour.

Ganache and Serving

  • Heat the heavy cream in a saucepan until simmering. Remove from heat and stir in chopped semisweet chocolate until smooth.
  • Spread the ganache generously over the cooled cheesecake.
  • Garnish with chopped mint chocolate candies.
  • Chill in the fridge for at least 4 hours or preferably overnight before serving.

Notes

For healthier variations, consider using Greek yogurt instead of sour cream and opt for sugar substitutes.
