For the Whipped Cream Filling

  • 1 1/2 cups heavy cream, chilled Essential for the whipped filling.
  • 1 cup powdered sugar Sweetens the whipped cream nicely.
  • 1/2 teaspoon peppermint extract Brings refreshing mint flavor.
  • 1 drop Green food coloring Optional for visual appeal.

For the Ganache and Garnish

  • 1 cup semisweet chocolate chips Used for the ganache.
  • 1/2 cup heavy cream For making the chocolate ganache.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan by lining it with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  • In a large bowl, beat the eggs and sugar until light and fluffy for about 3 minutes. Add vegetable oil and vanilla extract, mixing until smooth.
  • Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  • Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes or until it springs back when lightly touched.

Making the Filling and Ganache

  • While the cake is baking, whip the heavy cream and powdered sugar in a chilled bowl until soft peaks form. Add peppermint extract and food coloring, whipping until stiff peaks form.
  • In a small saucepan, heat 1/2 cup heavy cream until simmering, then pour it over the chocolate chips. Let it sit for a minute and stir until smooth.

Assembly

  • Once the cake is baked, let it cool for a few minutes. Turn it out onto a powdered sugar-dusted towel and roll it up with the towel to cool completely.
  • Carefully unroll the cake, spread the mint whipped cream filling evenly, and roll it back up, removing the towel.
  • Drizzle the chocolate ganache over the top of the rolled cake and garnish with chocolate chips and fresh mint leaves.
  • Chill in the refrigerator for at least one hour before serving.

Notes

For a thicker filling, you can add more powdered sugar. Feel free to customize the color of the mint filling. This cake can be adapted for gluten-free diets by using gluten-free flour.
