Ingredients
  

Chocolate Cake

  • 1 box chocolate cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup water

Cheesecake Layer

  • 2 packages cream cheese, softened 8 oz each
  • 1 cup granulated sugar
  • 2 large eggs to bind it all beautifully
  • 1 teaspoon vanilla extract for that warm aroma
  • 1/4 teaspoon mint extract infusing each bite with refreshing minty goodness
  • 1/4 cup sour cream enhancing the creaminess

Fudge Layer

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup crushed mint chocolate candies or mint chocolate chips for garnishing

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch springform pan.
  • Prepare the chocolate cake mix according to the package instructions.
  • Pour the batter into the prepared pan and bake for 20-25 minutes. Allow the cake to cool completely in the pan.

Cheesecake Layer

  • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth.
  • Add eggs one by one to achieve a creamy mixture.
  • Stir in the vanilla and mint extract, followed by the sour cream.
  • Pour the cheesecake batter over the cooled chocolate cake layer.
  • Bake for 35-40 minutes until the cheesecake is set in the center.
  • Let the cheesecake cool inside the oven with the door slightly ajar for 1 hour.
  • Refrigerate for at least 3 hours or overnight.

Fudge Layer

  • In a microwave-safe bowl, melt chocolate chips and heavy cream together, stirring every 30 seconds until fully melted and smooth.
  • Mix in the additional vanilla extract.
  • Pour the melted fudge over the chilled cheesecake, spreading evenly with a spatula.
  • Return the cake to the refrigerator for at least 30 minutes to set the fudge.
  • Before serving, garnish with crushed mint chocolate candies and fresh mint leaves if desired.

For best results, ensure cream cheese is well softened to avoid lumps. Allow adequate cooling time before serving. Consider using low-fat cream cheese or Greek yogurt as a healthier alternative.
