Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, cream the softened unsalted butter and granulated sugar together until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour and cocoa powder until smooth.
  • Gradually add the dry mixture to the butter mixture, alternating with a splash of whole milk if needed.
  • Fold in the chopped pecans gently.

Baking

  • Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake bakes, melt the remaining butter in a saucepan and stir in the cocoa powder and whole milk until smooth.
  • Whisk in the confectioners' sugar until glossy and cool slightly.
  • Once the cake is baked, immediately sprinkle mini marshmallows over the warm cake.
  • Pour the warm icing over the marshmallows and spread it out to cover the surface evenly.
  • Allow the cake to cool slightly before serving.

Notes

For best results, make sure all ingredients are at room temperature before mixing. Avoid overbaking to prevent a dry texture.
