Preparation

  • Prepare your workspace by gathering all ingredients and tools including a large mixing bowl, spoon or mixer, a baking sheet lined with parchment paper, and a microwave-safe bowl for melting chocolate.

Mix the Base

  • In a large mixing bowl, combine the creamy peanut butter, softened unsalted butter, and vanilla extract. Blend until it’s smooth and creamy.

Add Sugar and Salt

  • Gradually sift in the powdered sugar and fine salt, mixing thoroughly until combined into a thick dough-like consistency.

Shape into Balls

  • Take a tablespoon of the mixture and roll it into a ball. Place each ball on the parchment-lined baking sheet.

Chill the Dough

  • Chill the baking sheet in the refrigerator for about 30 minutes.

Melt the Chocolate

  • In a microwave-safe bowl, combine chocolate chips with coconut oil. Heat in 20-second intervals until completely smooth.

Coat the Buckeyes

  • Use a toothpick or fork to dip each buckeye into the melted chocolate, coating each fully before returning them to the lined baking sheet.

Final Chill
