Ingredients
  

Cabbage Base

  • 1 head green cabbage, cut into 1-inch slices

Beef Mixture

  • 1 lb lean ground beef
  • 1/2 cup tomato sauce (or ketchup)
  • 1/2 cup shredded cheese (mozzarella or Monterey Jack), divided
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red chili pepper flakes
  • 1 tsp grated garlic
  • 1/2 cup chopped green onion
  • 1/2 cup chopped parsley

Preparation

  • Preheat your oven to 400°F (200°C).
  • Arrange the cabbage slices on a baking sheet. Brush lightly with oil and season with salt and pepper.
  • Roast the cabbage slices in the oven for about 10 minutes until they are slightly tender.
  • In a bowl, combine the ground beef with garlic, green onion, parsley, red chili flakes, half of the cheese, salt, and pepper. Mix until incorporated, then shape into four patties.

Assembly

  • Top each roasted cabbage slice with a spoonful of tomato sauce, a sprinkle of cheese, a beef patty, and another sprinkle of cheese.

Baking

  • Place the assembled cabbage burgers back into the oven and bake for an additional 10-12 minutes or until the cheese has melted and the patties are cooked through.

Notes

These burgers can be stored in the refrigerator for up to 3 days. To reheat, place in the oven at 350°F (175°C) until warmed through. For a variety, substitute the beef with lentils or chickpeas for a vegetarian option.
