Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two cake pans.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  • In another large bowl, beat together softened butter and granulated sugar until the mixture is light and fluffy. Add eggs one at a time, blending well after each addition, followed by vanilla extract.
  • Gradually introduce the dry mixture, alternating with coconut milk. Mix just until combined, then fold in crushed pineapple and shredded coconut.

Baking

  • Divide the cake batter evenly between prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow cakes to cool completely.

Frosting

  • In a bowl, beat together cream cheese, softened butter, powdered sugar, vanilla extract, and coconut milk until smooth and creamy.
