Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 8-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3 minutes.
  • Add eggs one at a time, beating well after each addition.
  • Stir in vanilla extract and pink dragon fruit puree.
  • Gradually add the dry ingredients to the wet ingredients, alternating with milk.
  • Mix until just combined.
  • Divide the batter evenly between the prepared pans and smooth the tops.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Frosting and Assembly

  • Beat the softened butter in a large bowl until smooth.
  • Gradually add powdered sugar, beating well after each addition until fluffy.
  • Stir in vanilla extract, heavy cream, and pink dragon fruit puree.
  • If desired, add pink food coloring.
  • Once the cake layers are cooled, spread frosting on top of one layer and place the second layer on top.
  • Frost the entire cake and decorate with edible flowers if desired.

Notes

Ensure the butter is at room temperature for better creaming with sugar. Use a kitchen scale for accurate flour measurement. You can make the layers in advance and frost them on the day of serving.
