For the Cream Cheese Frosting

  • 8 oz cream cheese, softened to a smooth consistency
  • 0.5 cup unsalted butter, softened for a rich frosting
  • 4 cups powdered sugar gradually added for sweetness
  • 1 tsp vanilla extract for a fragrant finish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  • In a separate bowl, cream together softened butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and pink food coloring.
  • On low speed, alternate adding the dry ingredients and buttermilk, beginning and ending with dry ingredients.
  • Gently stir in white vinegar.
  • Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Allow cakes to cool completely on a wire rack before frosting.

Frosting

  • Beat softened cream cheese and butter until smooth and creamy.
  • Gradually add powdered sugar and vanilla extract, beating until fluffy.
  • Once the cakes are cooled, frost them generously, stacking and layering as desired.

Notes

Use room temperature ingredients for improved mixing and texture. Experiment with flavor variations by adding lemon zest or almond extract. Use fresh vinegar to aid in leavening; apple cider vinegar can be a substitute.
