Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Lightly grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  • In a separate bowl, combine vegetable oil, buttermilk, eggs, red food coloring, vinegar, and vanilla extract. Whisk until well blended.
  • Gradually incorporate the wet ingredients into the dry ingredients, mixing carefully until just combined.
  • Evenly divide the batter into the prepared cake pans and smooth the tops.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.

Frosting

  • While the cakes cool, beat cream cheese and unsalted butter until smooth and creamy.
  • Gradually add powdered sugar and vanilla extract. Continue to beat until it reaches a light and fluffy consistency.

Assembly

  • Place one cake layer on a serving plate and spread a layer of cream cheese frosting across the top.
  • Add the second cake layer on top and frost the top and sides with the remaining cream cheese frosting.
