  • 1.5 cups 1 1/2 cups graham cracker crumbs
  • 0.25 cups 1/4 cup granulated sugar
  • 0.5 cups 1/2 cup unsalted pistachios, finely ground
  • 0.5 cups 1/2 cup unsalted butter, melted

For the cheesecake filling

  • 24 ounces 24 ounces cream cheese, softened Ensure cream cheese is at room temperature.
  • 1 cup 1 cup granulated sugar

Preparation

  • Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, finely ground pistachios, and melted butter. Press this mixture firmly into the bottom of the prepared springform pan.

Making the Cheesecake

  • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  • Add the eggs one by one, beating well after each addition. Stir in the sour cream, vanilla extract, and pistachio paste or finely ground pistachios until well combined.
  • Pour the cheesecake filling over the crust in the springform pan, ensuring an even layer.
  • Bake for 45-50 minutes, or until the edges are set and the center jiggles slightly.
  • Turn off the oven and let the cheesecake cool inside with the door closed for 1 hour.
  • Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours or overnight.

Topping and Serving

  • For the pistachio cream topping, beat the heavy cream and powdered sugar until stiff peaks form. Gently fold in the pistachio paste.
  • Spread the pistachio cream topping over the chilled cheesecake and garnish with freshly chopped pistachios.
  • Slice, serve, and enjoy!

Notes

For a foolproof cheesecake, ensure your cream cheese is at room temperature. You can replace or mix the crust ingredients, using crushed almond cookies or shortbread for a different flavor profile.
