Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan thoroughly.
  • Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl, stirring until well combined.
  • Press the crust mixture firmly into the bottom of the springform pan. Bake for 8-10 minutes until lightly golden, then let cool completely.

Making the Cheesecake Filling

  • In a large mixing bowl, beat softened cream cheese and sugar together until smooth.
  • Add vanilla extract and eggs, one at a time, mixing well after each addition.
  • Gently fold in finely chopped pistachios and heavy cream until fully incorporated.
  • Pour the cheesecake mixture over the cooled crust, smoothing the top. Bake for 50-60 minutes, or until the center is just set but still slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door ajar to cool gradually. After about an hour, refrigerate for at least 4 hours or overnight.

Preparing the Raspberry Topping

  • Combine fresh raspberries, sugar, and lemon juice in a saucepan over medium heat. Cook until the raspberries break down and the sauce thickens. Cool completely.

Assembly

  • Once the cheesecake is chilled, pour the raspberry sauce over the top and gently spread it into an even layer.

Notes
