  • 0.5 cups raspberry puree adding a fruity glaze

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan, lining the bottom with parchment paper.
  • In a small bowl, combine graham cracker crumbs, sugar, and melted butter until well combined and crumbly.
  • Press the mixture into the bottom of the prepared pan to form an even crust layer.
  • Bake the crust for 10-12 minutes, or until lightly golden. Let it cool.

Filling

  • In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth and creamy.
  • Incorporate eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract, then gradually add heavy cream, chopped pistachios, and raspberry puree, mixing until smooth.
  • If desired, add the optional flour for a thicker consistency.

Baking

  • Pour the cheesecake mixture over the cooled crust and smooth the top with a spatula.
  • Bake for 50-60 minutes, until the center is set but slightly jiggly.
  • Turn off the oven and let the cheesecake cool completely with the oven door slightly ajar to prevent cracking.
  • For best results, refrigerate for at least 4 hours, preferably overnight.

Topping

  • Gently heat raspberry puree in a small saucepan, then drizzle it over the chilled cheesecake.
  • Garnish with fresh raspberries and crushed pistachios just before serving.

Notes

For an extra flavor twist, consider adding lemon zest. You can substitute other berry purees or replace heavy cream with Greek yogurt for a lighter version. Make sure to let the cheesecake chill overnight for optimal flavor.
