Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C).
  • Line a muffin tin with cupcake liners.
  • Combine the graham cracker crumbs and melted butter in a mixing bowl until well mixed. Press the mixture firmly into the bottom of each cupcake liner to form a crust.
  • In another bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  • Add the vanilla extract and heavy cream to the cream cheese mixture, beating until well combined.
  • Gently fold in the crushed pistachios.

Filling and Baking

  • Spoon the cheesecake mixture over the graham cracker crust in each cupcake liner, filling them almost to the top.
  • Add a spoonful of raspberry puree onto the top of each filled cupcake and swirl it in with a toothpick.
  • Bake the cupcakes for 15-18 minutes, until they are just set but still slightly wobbly in the center.
  • Allow the cupcakes to cool at room temperature before transferring them to the refrigerator.
  • Chill for at least 2 hours before serving.

Serving

  • Top each cupcake with fresh raspberries and a sprinkle of extra crushed pistachios.

Notes
